Συμπληρωματα διατροφης και ανοσοποιητικό σύστημαΗ άμυνα του ξενιστή, που ορίζεται από το περίπλοκο δίκτυο των λεμφοειδών οργάνων, των κυττάρων και των μορίων, είναι ζωτικής σημασίας για την επιβίωση (Parkin & Cohen, 2001). Όταν η ανοσία πάει στραβά, προκύπτουν παθογένεση, μεταβολικές, εκφυλιστικές ασθένειες. Οι ανοσοενισχυτικές ιδιότητες στα συμπληρωματα διατροφης, όπως τα προβιοτικά, οι ολιγοσακχαρίτες και οι β-γλυκάνες έχουν αποδειχθεί συχνά εξαιρετικά δραστικά στη διαδικασία της ανοσοενίσχυσης του οργανισμού (Wichers, 2009). Έχει αποδειχθεί επανειλημμένα ότι ειδικά τα συμπληρώματα με πρωτεΐνες ορού γάλακτος ενισχύουν την ανοσία κατά τη διάρκεια της ζωής του ανθρώπου και έτσι αποτρέπουν πολλές ανοσολογικές επιπλοκές (Badr, Mohany, & Metwalli, 2011). Ο συνδυασμός πρωτεΐνης ορού γάλακτος / αλγινικού αποκατέστησε αποτελεσματικά τη βιωσιμότητα του Saccharomyces boulardii. Αυτή η μελέτη, που πραγματοποιήθηκε χρησιμοποιώντας προσομοιωμένο γαστρικό και εντερικό υγρό, έδειξε ποσοστό επιβίωσης 40% για την ενθυλακωμένη ζύμη σε σύγκριση με το 10% για ελεύθερα κύτταρα ζύμης (Hébrard et al., 2010). Η πρωτεΐνη ορού γάλακτος βελτιώνει τη βιωσιμότητα του S. boulardii κατά την ξήρανση με ψεκασμό (Duongthingoc, George, Katopo, Gorczyca, & Kasapis, 2013).
